Babi Kecap (Pork Braised in Sweet Soy)

Babi kecap is a Chinese-Indonesian braise loved in Bali and across the archipelago's non-Muslim communities: chunks of pork belly simmered low and slow in kecap manis with garlic, ginger and a little chilli until the meat is meltingly soft and the sauce turns dark and glossy.

It's the kind of dish that fills the house with an incredible smell and tastes even better the next day. Sweet, salty and rich, with just enough spice to keep it interesting.

Best of all, the hands-on work is about fifteen minutes. Once it's in the pot, the stove does the rest while you get on with your evening.

Pantry bits

  • Heavy-based pot or Dutch oven with lid
  • Chopping board and sharp knife
  • Wooden spoon
  • Tongs

Ingredients

  • 1kg pork belly, rind removed, cut into 3cm chunks
  • 2 tbsp vegetable oil
  • 6 cloves garlic, roughly chopped
  • 4 shallots (eschalots), sliced
  • 3cm piece fresh ginger, julienned
  • 2 long red chillies, halved lengthways
  • 4 tbsp kecap manis
  • 2 tbsp light soy sauce
  • 1 tbsp brown sugar
  • 2 star anise
  • 1/2 tsp ground white pepper
  • 500ml water
  • 2 spring onions, sliced, to serve

Instructions

  1. Heat the oil in a heavy-based pot over medium-high heat. Brown the pork in two batches until golden on a couple of sides, then set aside.
  2. Reduce the heat to medium, add the garlic, shallots and ginger and cook for 2 minutes until fragrant.
  3. Return the pork with the chillies, kecap manis, soy sauce, sugar, star anise and white pepper, stirring to coat.
  4. Pour in the water, bring to a simmer, then cover and cook on low for 1 hour, stirring occasionally.
  5. Remove the lid and simmer for another 20 to 30 minutes until the pork is very tender and the sauce has reduced to a glossy, syrupy coating.
  6. Skim off excess fat if you like, and check the seasoning. It should be sweet-salty with a gentle chilli warmth.
  7. Scatter with spring onion and serve with steamed rice and blanched Asian greens.
