Ayam Cabe Ijo (Indonesian Green Chilli Chicken)

Cabe ijo is the green sambal of Padang cooking: green chillies, shallots, garlic and green tomato, blitzed rough and fried in oil until they collapse into a coarse, fragrant paste. It is warm rather than punishing, and much fresher tasting than a red sambal.

The Padang original uses long-fried chicken. We cut it down to thigh fillets in a hot pan so the whole thing lands in twenty minutes without losing the flavour of the sambal.

Ingredients

  • 700g chicken thigh fillets, cut into large pieces
  • 1 tsp salt
  • 3 tbsp neutral oil
  • 10 long green chillies, roughly chopped
  • 4 green birds eye chillies, optional
  • 6 shallots or 1 red onion, roughly chopped
  • 4 garlic cloves
  • 2 green tomatoes or 1 firm red tomato, quartered
  • 2 kaffir lime leaves
  • 1 stalk lemongrass, bruised
  • 1 tbsp lime juice
  • 1 bunch green beans, blanched, to serve

Instructions

  1. Season the chicken with the salt. Heat 1 tbsp of the oil in a large frying pan over high heat and fry the chicken for 4 minutes each side until browned and cooked through, then set aside.
  2. While it cooks, pulse the green chillies, shallots, garlic and tomato in a food processor to a coarse paste. Do not blend it smooth; it should stay rough and flecked.
  3. Add the remaining oil to the pan, then the paste, lime leaves and lemongrass. Fry over medium heat for 5 minutes, stirring, until the raw smell goes and the oil separates.
  4. Return the chicken and any juices, toss to coat and cook for 2 minutes so the sambal clings.
  5. Take off the heat, stir through the lime juice and check the salt. Serve with rice and blanched green beans.
